What the heck is “freeze-drying” and why is it totally freaking awesome?

I though you would never ask.

Freeze drying is a process to remove moisture from foods. This process of moisture removal uses a high-power vacuum and sub-zero temperatures to force the water out of foods while preserving the shape, size, color, and taste of many foods. Most foods that undergo this highly-technical process develop a consistent texture that many find far more palatable that the same food item filled with moisture. The texture can range from cracker to cotton-candy like.

Some foods that are naturally low in moisture, like candies, undergo a (delicious) metamorphosis. This drastic change in shape, size, consistency, and even flavor is what makes freeze dried candies unique.
